Professor Cheng Shuk-han of the Department of Biology and Chemistry at CityU has developed a new set of tools for the rapid identification of meat species, leading to a substantial reduction in processing time.
The innovative technology can identify up to 30 meat species at a time, which means it can easily verify the ingredients of food products made with mixed meats, such as sausages and meat balls. The technology will have a positive impact on public health because of the potential application in the area of monitoring the ingredients in pre-packaged foods and animal feed.
Professor Cheng will introduce the research project, its application and test results at the press briefing.
