About the talk

In this talk, artist duo the Center for Genomic Gastronomy and Prof Chak K. Chan, Dean and Chair Professor of Atmospheric Environment, School of Energy and Environment, City University of Hong Kong, will describe their research in relation to air quality and how we eat. Prof Chan, who has over 30 years of research experience in air pollution and atmospheric aerosols, will describe the connections between different styles of cooking and air quality in the Mong Kok neighborhood and beyond. The Center for Genomic Gastronomy will present their decade-long investigation into Aeroir—the unique atmospheric taste of place— describing Smog Tasting and their latest work Guided Smog Smelling: Hong Kong. Join us for a conversation about the connections between cooking, tasting, smelling and air quality in Hong Kong and the world.

About the speakers

 𝗧𝗵𝗲 𝗖𝗲𝗻𝘁𝗲𝗿 𝗳𝗼𝗿 𝗚𝗲𝗻𝗼𝗺𝗶𝗰 𝗚𝗮𝘀𝘁𝗿𝗼𝗻𝗼𝗺𝘆

The Center for Genomic Gastronomy is an artist-led think tank launched in 2010 by Cathrine Kramer (Norway) and Zack Denfeld (US) that examines the biotechnologies and biodiversity of human food systems. Their mission is to map food controversies, prototype alternative culinary futures and imagine a more just, biodiverse & beautiful food system.
The Center presents its research on the organisms and environments manipulated by human food cultures in the form of public lectures, research publications, meals and exhibitions. They have conducted research in Europe, Asia, and North America, collaborating with scientists, chefs, hackers and farmers. The Center’s work has been published in WIRED, We Make Money Not Art, Science, Nature and Gastronomica and exhibited at the World Health Organization, Kew Gardens, Science Gallery Dublin and others.

Prof Chak K. Chan has over 30 years of research experience in air pollution and atmospheric aerosols. His work covers a broad spectrum of laboratory and field studies on the chemistry and physics of atmospheric aerosols, including source apportionment, hygroscopic growth and cloud condensation nuclei activities, size distribution dynamics, and the formation of secondary pollutants. He was the Project Manager of the HKUST Air Quality Research Supersite before he moved to CityU in December 2015. Most recently, he works on cooking and traffic emissions and atmospheric reactions leading to the formation of secondary pollutants such as sulfate, organic aerosols, and ozone. He was Editor-in-Chief of Atmospheric Environment in 2008 – 2019. He has also served a number of HKSAR committees, including the Environment and Conservation Fund, the Physical Science Panel of the HK Research Grants Council, and the Green Tech Fund Assessment Committee.
